This soup. Oh my gosh. So good. My husband and I made it a few weeks ago and I fell in love with it. So, I made it again and I ended up eating four bowls of it in one day. Not kidding.
Just another awesome recipe from Tess Masters and her new book The Blender Girl! Love this book! On the inside cover, she asks “What’s Your Perfect Blend?” —- Well, for me, it’s this soup! Cauliflower….cashews….garlic….chives….I say that’s a perfect blend!
Things You Should Know
She calls for 2 tablespoons of olive oil for sautéing the garlic, leeks, and cauliflower, but I chose to totally skip the oil and water sauté instead. I try to refrain from using oil whenever possible, so I use water or fresh juice for sautéing.
She suggests adding a scoop of a cooked grain (such as quinoa, millet, brown rice, etc) to your bowl of blended soup. I used quinoa for a few of my bowls and I used Raw Shelled Hemp Seeds for a few of them. Loved it both ways, but tossing in the hemp seeds was definitely the fastest and easiest.
The recipe calls for raw cashews OR raw almond slivers….I chose cashews.
I used a Vitamix instead of a standard blender. So, as soon as I was done with the sautéing part, I just tossed it all into the Vitamix and blended the same way I normally would for any other blended soup. Because the Vitamix also cooks your food, I did not transfer back to the pan etc.
I refrigerate leftover soup in mason jars….easy to pour into a pot for reheating.
I added extra salt with my chives and I added lots and lots of chives…love them!
To serve, ladle the soup into bowls and garnish with either chopped chives or nutmeg.
I have family coming to visit next week and I am definitely planning to prepare some soups to keep in the fridge while they are here. I am planning to make a double batch of this one!
